Looking for something yummy you can fix in your dorm that’s quick and easy? I’ve got you covered with my favorite Golden SpaghettiOs recipe!
This pasta dish is packed with veggies, easy to make, and perfect for anyone wanting a simple, delicious meal.
Ingredients:
• 5-6 medium tomatoes (or 3-4 large tomatoes or a big handful of cherry tomatoes)
• 1 Yellow Zucchini
• 1 Green Zucchini
• 1 Red Bell Pepper
• 1 Yellow Onion
• 7 Garlic Cloves
• Olive Oil
• Salt & Pepper
• 1 TBsp Garlic Powder
• 1 TBsp Onion Powder
• 1 lb Pasta (any small pasta shape like Anelli Siciliani)
• Basil
• Lemon Juice
• ½-1 cup Vegetable or Chicken Broth (as needed)
• Parmesan (for garnish)
Instructions:
1. Preheat oven to 425°F.
2. On a large baking sheet, add the tomatoes, chopped zucchini, red bell pepper, onion, and whole garlic cloves. Drizzle with olive oil to cover, and then season with salt, pepper, onion powder, and garlic powder. Mix everything to coat evenly. Roast for about 30 minutes or until lightly golden.
3. Meanwhile, boil water in a pasta-sized pot, with 1 tsp. salt. Once the pot comes to a boil, add the pasta (I’m using Anelli Siciliani, but you can use any small pasta shape of your choice). Cook until tender and drain, (follow package directions) reserving a cup of pasta water for later. Drizzle the drained pasta with a bit of olive oil to prevent it from sticking together.
4. Once the vegetables are nice and roasted, add them to a blender with the reserved pasta water and torn basil leaves. Blend until smooth and add vegetable or chicken stock until you reach sauce-like consistency. Finish with some lemon juice, adjusting the salt and pepper as needed.
5. Add the golden sauce to the pasta and stir to combine. Finish with Parmesan and more basil for garnish.
